Today I bring you a recipe for one of the tastiest muffins I’ve ever eaten. I love any and all banana flavoured baked goods, and I believe I have already expressed this love here, but it needs to be said again. A banana and walnut muffin would have been delicious enough, but when you top the whole thing off with a swirl of Nutella…well, they call that cake heaven.
I brought some of these muffins with me to visit a friend this weekend, they went down a treat with her and her adorable kittens, who won’t think twice about stealing any kind of food from you! See below for one of said kittens in the sink eating the remains of the evenings dinner.
So adorable! Luckily they never got in to the muffins.
If you’re in to Nutella I urge you to bake these, as soon as possible. I pretty much inhaled one within 5 minutes of them leaving the oven – yum!
These blondies were not supposed to turn out the way they did. They suffered a number of baking disasters due to my nervousness about cooking sugar and my disregard for recipe instructions. Lesson learned. On the bright side, they turned out super delicious, with a little bit of recipe free-styling, and went down a treat when I produced them last thing on Friday afternoon at work.
I had two sad brown spotted bananas in my fruit bowl, in desperate need of being turned in to a scrumptious baked good. Enter these blondies. (side note-, I really love that white chocolate brownies are called blondies!) Blondies retain the rich, dense properties of brownies which is further exaggerated here with the banana. The sweetness of the white chocolate is enhanced with a generous few dashes of vanilla extract and the toasted almonds add a nice crunch.
For a baking blog I sure don’t seem to be doing a lot of baking recently, BUT there is a long weekend up ahead and I’m heading north to visit my parents so there will be plenty going on soon!
Granola bars are my at work, morning dip pick me up. I’m a creature of habit, so at 10:30 exactly I’m looking for my second cup of tea and a cereal bar to tide me over until lunch. This week whilst doing my weekly food shop I decided I should try to make my own , rather than buy my usual (annoyingly expensive when not on offer) favourites.
The added bonus of making these bars is the left over popcorn!
It’s the weekend…finally! I have not had the best working week of my life so I cannot wait to enjoy the next two days as much as possible with friends, food and music.
Working in an office, as I do, takes a bucket load of patience at times. The answer? Go to the kitchen, make a cup of tea, count to ten and eat some chocolate. I currently have a big bag of peanut M & M’s on my desk which have been helping me in my most stressful moments, and they inspired me to adapt this already ridiculously awesome cookie recipe from the newly released (in the UK anyway) Smitten Kitchen Cookbook.
These cookies bring together popcorn, chocolate and peanut butter….really there is nothing better than that. They are crispy at the edges with a slightly chewy centre. The popcorn adds crunch, M & M’s colour and, most importantly, chocolate and there is a background peanut butter flavour to finish things off.
