It’s time to be healthy again. With all the cakes I consume I have to at least try to work in a few healthy snacks from time to time. Luckily granola is delicious and it usually requires a trip to Wholefoods, my favourite supermarket.
It’s also summer and eating a more wholesome diet never seems quite as traumatic when it’s sunny outside, so we have to make the most of it when we have the chance!
Summer also seems like a good time to try new things, or maybe even to take a few chances. Whilst on a drive north this week I was listening to my favourite podcast (listen here, it’s a lot of fun!) and the topic up for discussion was a summer bucket list. Basically a list of things to do/experience before the summer is out.
Well, we are well in to summer here but it’s never too late and I’ve been giving some thought to what would be on my list. Here’s what I have so far:
- Start using the skipping rope I bought on a whim about a month ago.
- Make gooseberry jam.
- Have a barbeque at the beach.
- Finish the band t-shirt patchwork quilt I started a year ago – probably more a winter task but it’s been sitting under my bed for so long I can’t take it any more, and there will be rainy summer days to fill.
- Bake rye bread.
- Make some life decisions…y’know, nothing major.
I’ll add to it over the next week or so. Hopefully I can get the majority of them checked off!
Granola is totally quick to prepare, and can easily be adapted to suit whatever is in the cupboards.
Get creative and use different combinations of seeds and nuts.
Pre-roasting. Make sure you move the granola around a couple times throughout the baking time to make sure nothing burns and everything is evenly cooked.
The granola will crisp up as it cools. Definitely sneak a few handfuls whilst your decanting in to your jar.
Coconut Almond Granola
3 cups oats
1 cup coconut flakes
1 cup whole almonds
1/4 cup pumpkin seeds
1 tsp salt
1/2 cup oil
1/2 cup honey
1 cup dried apricots
Preheat the oven to 170 degrees C. Line a baking tray with greaseproof paper.
In a large mixing bowl, stir together oats, coconut, almonds, seeds, salt and cinnamon.
In a small saucepan, heat the oil and honey to combine.
Pour the honey and oil mixutre over the oats and stir well to ensure everything is well coated.
Spread the granola mix in an even layer on the baking tray and bake for 25-30 mins. Stir the granola 2 or 3 times throughout the baking time to ensure everything is evenly baked.
Remove from the oven when the granola is golden brown and allow to cool.
Slice the apricots into bite size chunks and spread over the granola, once cooled. Store granola in an air tight container.
