Strawberry and Lime Frozen Yogurt

Fear not, just one more healthy recipe before the butter levels increase significantly in strawberry week.  Still to come is strawberry cupcakes, strawberry tarts and a bonus recipe resulting from the two extremely ripe bananas in my fruit bowl, strawberry and banana loaf.

You really don’t miss it in this recipe though, I mean not even I want butter in ice cream.  This frozen yogurt tastes like a summer party in your mouth, I promise.  It is incredibly simple, even more so if,  unlike me,  you’re fancy and have an ice cream maker but that is certainly not essential.

The key to success with this recipe is good strawberries.  Now that we are finally getting some slightly warmer weather the UK strawberries are starting to show up in the supermarkets, which is great and they definitely taste better than the extortionate ones you can buy in December.  I really would recommend going to pick your own those, if it’s a dry day then it’s a great way to spend an hour or so and you really feel like you’ve earned your strawberries when you get them home.  It will make everything you use them in taste than much better!

Here we are just using four ingredients.  Strawberries are joined by sugar, yogurt and lime – zest and juice.  The lime cuts through the sweetness of the berries and gives the fro-yo big kick in the flavour department.

This would be great for dessert at a barbeque with some fresh strawberries, or with some fresh strawberry sauce.  I even think you could pass this off as a breakfast and top it with granola!

Strawberry & Lime Frozen Yogurt

450g strawberries

1/3 cup sugar

1 cup yogurt

1 lime, zest and juice

First prepare the strawberries.  You don’t really need to chop them, the blender will take care of that.

Add the yogurt and zest.  Blitz!  I used a hand blender, but a stand blender would work perfectly, or if you have neither you could mash the strawberries up by hand, it will just be a little chunkier.

Stir in the lime juice to taste.

Pour the mixture into a tub and freeze.  Stirring every couple of hours until ready to serve.  Then either serve straight away or store in the freezer.  When you’re ready to use the fro-yo, leave it out for about twenty minutes to soften prior to serving.
